It's Christmas cookie time!!!
Okay, I know by the looks of it the cookies aren't looking like they belong on some sort of professional baking show....but, they taste AMAZING & were decorated and made with love by my kids....with the help of my mom and I.
I may be biased, but if you have a sweet tooth like me....these will for sure hit the spot! I cannot remember a Christmas without these cookies. My sister, cousins, mom, & aunts and uncles all grew up making these cookies with my grandma at Christmas time. She has since passed away, but I know she is smiling looking down on us carrying on her tradition! Keep Scrolling for the ingredients and instructions! :). I sure miss our Ukrainian Christmas Eve dinner at her row home in Fairmount (Philadelphia) at her house are my favorite and most treasured Christmas memories!
Our Little Helpers:
The Basic Spritz Cookie- With added Lemon & Cream Cheese for extra goodness!!!
-1 cup butter
-3 ounces cream cream cheese
-1 cup sugar
-1 egg, beaten
-1 tablespoon lemon juice
-2 1/2 cups all purpose flour
-1 teaspoon baking powder
-food coloring (optional!)
-Pre-Heat oven to 375 degrees
-Cream together butter and cream cheese; add sugar and continue to cream until fluffy
-Mix the egg, lemon juice and blend util well combined
-Blend flour and baking powder together, then add to the cream cheese mix until combined
-Use cookie press to press out cookies onto cold, ungreased baking sheet pan
-Bake for 7-10 minutes..until just beginning to brown lightly
-Let cookies cool on sheet for about 1 minute, then remove from rack
Yield: Approximately 5 dozen cookies
